I don’t know about you, but Monday’s are always the hardest for me. After enjoying a relaxing weekend off, the last thing I want to do is work all day and then come home and cook.
That’s why I am always looking for new crock pot recipes that I can try. When I can put something in the slow cooker before heading out the door, it seems like the whole day just goes more smoothly.
If I know that I don’t have to go home and start cooking after a full day, there’s that much more weight lifted off of me and it really gives Monday a better outlook.
That’s why I was so happy when I found this recipe for slow cooker rigatoni on Group Recipes. There weren’t a whole lot of ingredients required and the process to put everything together looked simple.
I gave it a try right away and it was a huge hit among my family. Not only did it taste good, there was only one dish to wash after everyone was done eating…and everyone ate! It was a great Monday!

Quick Tip: Use only marinara sauce instead of alfredo.
Wouldn’t cooking the rigatoni first THEN in the crock pot for 5 hours make it really mushy?
