Here’s a Meal Fit For A King
When you need an easy-to-prepare meal that is fancy enough for special occasions, pot roast is it. This all-American dish is something we used to have almost every Saturday when I was young. It was one of my favorites – well, I think it was everyone’s favorite.
We would gather around the dinner table and my parents would ask about school, homework and what was going on with our friends. My mom served mashed potatoes and steamed carrots with the pot roast, and I don’t think we ever had any leftovers.
Now that I have a family of my own, I want to keep that tradition alive. Unfortunately, we’re not having pot roast every Saturday but at least once a month, we do! I love making it in the slow cooker – this recipe makes the meat so juicy and tender that you don’t even need a knife.
I like to prepare different kinds of vegetables each time, and we always have some homemade dinner rolls or biscuits to go with the roast.
