Today I’m going to share a recipe that was one of my late fathers favorites. He loved potato dishes, whether it was a main dish or something served as a side. Literally, any way, shape or form! Whenever my mother was making pasta or rice, my Dad would have a very small serving and claim he wasn’t hungry. At some point Mom gave in and always made “a little something potato” for my father, when the rest of us were having something else.

I must say Dad wasn’t the only one in our family who loved these scalloped potatoes! This was usually a Sunday dish for us – back when there were no fancy mandolin slicers, it required some effort to make this for a family of six!

When we got older we would, of course, help her out with cooking. We tried all kinds of variations of these potatoes – sometimes adding more spices, sometimes turning it into a main dish by adding ground beef. They were all incredibly tasty but I think this is still my favorite version.
