Making Lunch Is A Walk In The Park When You Have This Rollup Recipe

If you’re not a fan of Swiss cheese, you can use whatever kind of cheese you like the most. These rollups are awesome for adding some healthy veggies to your family’s diet!

I’ve hidden all kinds of vegetables in these and my kids haven’t even noticed! A special tip for you; grate some carrots and add that in there, as well. Super delicious and very healthy! My husband prefers his rollups with extra hot sauce, I like to add apple slices to mine. And my kids prefer these with double cheese! Or that’s what they call it – they watch me make these and ask me if I could add another layer of cheese in there!

 

Ingredients

3 tablespoons of Hellman’s mayonnaise

1 tablespoon of pickle relish

1 whole grain tortilla

Thinly sliced ham

Sliced swiss cheese

1 avocado

1 tomato

baby spinach/lettuce, cucumber & bell pepper slices

hot sauce (optional)

 

Instructions:

Mix the mayo and relish in a small bowl. Then spread the mixture onto a whole wheat tortilla. Next, lay out the ham and swiss cheese on top of the tortilla. Make sure to lay out the ham and cheese evenly — this will make rolling the tortilla much easier.

Chop up one avocado and one tomato and arrange them on top of the tortilla. It’s a sneaky way to get some fruits and vegetables into kids’ bellies. You could add baby spinach and sliced bell peppers as well. If you’re making these for yourself and you like spicy food, drizzle some hot sauce on top.

Once the ingredients are added, roll up the tortilla. Fold up the sides as you go, exactly as you would fold up a burrito. Finally, wrap the rollup in aluminum foil, throw it in your kid’s lunch box and you’re ready to go. Yum!
