Seriously, when I first heard of this recipe for meatless lasagna I thought someone done lost their mind! How on earth can you have a lasagna without meat? And not only that but this lasagna doesn’t even use a tomato sauce. What?!?! Needless to say, I was quite leery about making this casserole. However, I put my big girl panties on and got my stuff together to make the lasagna anyway. Much to my surprise, I LOVED this roasted vegetable lasagna! My kids and husband did, too. I raise my glass to trying new things.
