However, i find that making and baking cookies can be sort of a tedious job. The worst part is waiting for the cookies to bake and cool so you can get the next batch on the sheets and in the oven. Perhaps, I need a bit more patience? Anyway, these lemon coconut cloud cookies are worth the wait and they are oh so good! You make these yummy little treats using a cake mix. Super simple ingredients!

The cake mix gives these cookies a light and fluffy bite. You literally feel as if you are biting into a cloud! Well, that’s what you would think anyway as I doubt anyone has ever actually bit into a cloud before LOL. You never know, though!

Mr. Food did a fantastic job with this recipe for lemon coconut cloud cookies. I was super impressed with how they turned out. Using a cake mix to make them really cut down on the ingredients list that a traditional cookie recipe would have.
