Leftovers Casserole – Try This Reuben Inspired Bake On For Size

You and your family are in for a real treat when you bake up this amazing casserole concocted from leftovers!

Even if you don’t have leftovers from a ham and saurkraut meal you can still make this yummy entree. I found that this casserole is relatively inexpensive to make and it always tastes great. When I made this dish I didn’t have any chunked ham but I did have lunch meat that was sliced thinly so I used that instead. Worked out just fine! You can also use slices of corned beef for a more authentic flavor.

When I was pregnant with my first child the doctor told me that I needed to stop eating Reuben sandwiches because I gained 8 pounds in one week! Apparently, I was consuming too much salt and retaining water. What’s a girl to do when she’s pregnant and hungry, though?

Quick Tip: If you don’t have/want diced ham you can use sandwich slices.
