Leftover Breakfast Muffins

We had a big trip coming up for my son for school. We had to leave at 5:00 am and we were going to be traveling on a bus for about 12 hours before arriving at our destination. When I was going through my checklist of things to do, I thought of breakfast that morning. Sure, we could have a bowl of cereal or a toaster pastry, but I didn’t think that was going to fill us up enough to ride comfortably all day.

I knew we would be doing nothing but snacking and eating fast food for the rest of the road trip, so I wanted something fulfilling to start out with. I found this recipe for breakfast muffins on Spend with Pennies and they sounded perfect. I made them the night before and that morning, popped a few in the microwave.

Of course we were running late so we grabbed them and headed for the car. We ate them on the way to the loading area and they were yummy. I sent my husband a text and said, “Enjoy those muffins..I know we did!”
