Lazy Man’s Slow Cooker Lasagna

When I make this for me and the hubby, there are usually plenty of leftovers. I try and save it for when we are going to have extra guests, but I can’t always hold off the craving that long. It’s okay though, because the leftovers hold really nicely in the fridge. I have even frozen small containers of this and reheated it later for a quick meal. The noodles are a little soft, but the flavor is still there. Check out what they are saying about this recipe over at Group Recipes:

I was worried about how this was going to turn out, but it really was fantastic.

 

Ingredients

1 lb Johnsonville Italian turkey sausage

1 medium onion, chopped

1 large (28 oz) jar Ragu spaghetti sauce

2 tsp italian seasoning

1/4 tsp thyme

1 15oz container part skim ricotta cheese (can use fat free – you won’t taste the difference)

1/2 to 1 c Kraft shredded parmesan or romano

2 c shredded mozzarella

12 uncooked lasagna noodles

 

 

Instructions

Spray slow cooker with cooking spray

In a large skillet, saute sausage and onion over medium heat until browned

Drain

Add sauce and seasonings, mix well, reduce heat to low

In a bowl, combine ricotta, parmesan, and 1 cup of mozzarella

Spoon 1/4 of the sausage mixture into the slow cooker, top with noodles, broken to fit

Top with half the cheese mixture

Continue building layers until all ingredients are used

Cover and cook on low 6-8 hours or high 3-4 hours

Sprinkle with remaining mozzarella, cover and cook 15 minutes more until cheese is melted
