In Just 5 Minutes You’ll Have Richard Nixon’s Favorite Dessert Salad On The Table

This is one of my favorite dessert salads, ever, Why? Because my grandma used to make it all of the time. it’s a vintage dish that I’m sure many ladies of the 50’s and 60’s adorned their tables with. In fact, my grandma said she would often make Watergate dessert salad when expecting company for dinner. I love the pretty green color of the salad and the taste of the pistachio pudding. So much yum in one dish.

When I serve this salad I scoop it into individual punch glasses so that everyone can see the pretty green color. Such a treat!

 

Ingredients

1 (4-ounce) box Jello instant pistachio pudding mix

1 (20-ounce) can Dole crushed pineapple, drained

1 (8-ounce) container Cool Whip, thawed

1/2 cup sweetened flaked coconut

1/2 cup Jet-Puffed miniature marshmallows

Maraschino cherries and additional marshmallows for garnish (optional)

Crushed pistachios for garnish

 

Instructions

In a large bowl combine the drained pineapple and the pudding mix. Stir to coat. Add Cool Whip and stir to coat. Add coconut and marshmallows; stir to combine.
If you like, decorate top with cherries and marshmallows. Chill for at least an hour before serving.

Quick Tip: Add some maraschino cherries to the top of the dessert for a colorful presentation.
