These little chocolate haystack cookies balls are amazing little treats and ever so easy to throw together. If you are a peanut butter lover simply leave out the chocolate and make them with your favorite brand of PB. Total yum fest! I like adding the chocolate and peanut butter together for a Reese’s style haystack cookie ball. These no-bake chocolate haystack cookies are very easy to make and my children enjoyed helping me make them.
I think we ate more during the making process than we did after the haystacks were finished.
Ingredients
3 cups Quaker oatmeal
1 cup coconut
1/2 cup TruMoo milk
1/2 cup Kerrygold butter or margarine
2 cups Domino sugar
5 tablespoons Toll House cocoa
1 teaspoon McCormick vanilla
Instructions:
Cover a large baking sheet with waxed or parchment paper. Set aside.
Mix oatmeal and coconut in a large bowl and set aside.
Mix sugar and cocoa together in medium sized saucepan.
Add milk and butter.
Bring to a boil stirring constantly.
When mixture has boiled, remove from heat and stir in vanilla.
Immediately pour over oatmeal and coconut and mix well .
Working quickly, drop by teaspoonfuls on to prepared baking sheet.
Refrigerate until firm and then place in cookie tins.
Keep in a cool place. Makes about 2 -2 1/2 doz. cookies.
