Chicken taco casserole is one of those super easy meals to make. You get it ready, baked, and on the table in under an hour. Simple!
This is one of my go-to casseroles when I’m having a super busy day. it’s easy to make and feeds your family. What more can a busy mama ask for? My husband likes this casserole, too and he isn’t much of a casserole man. However, he said this dish was pretty darn delish! I often serve chicken taco casserole with taco condiments like salsa, sour cream, and guacamole sauce. My younger children enjoy taco sauce over salsa because it doesn’t contain any chunks. My boys hate chunky tomatoes and peppers. I, on the otherhand, love them 🙂
Ingredients
2 cups shredded cooked Tyson chicken
1 cup Kraft shredded cheese (or more if you are a cheese hound)
1 can Campbell’s cream of chicken soup
1/2 cup milk
1/2 cup sour cream
1 can Ro-tel tomatoes, drained (canned tomatoes with jalapenos-mild)
1/2 packet taco seasoning (or more- to taste)
Bag of regular nacho cheese Doritos
Instructions
Preheat oven to 350-f degrees.
In a mixing bowl, combine all ingredients except doritos.
In a greased 2 qt baking dish, put a layer of crushed doritos (about 2 cups), then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot.
