The things about this fish recipe is that it’s not fried so you will not feel guilty in eating more than one piece. It’s easy to eat more than one because that tanginess of the lemon compliments the fish so much, allowing you to crave for more. It’s hard to find fish recipes that will satisfy me, but when I find one, I make sure to never let go of it. This has been one of those recipes!
Our friend over at Food.com has this to say about this recipe:
“I thought this was delicious! I love the tartness of lemon, and I always use real lemon juice, squeezed from a lemon, when I cook.”
Oh my goodness! It was delicious. My first try was a bit soggy though, but all you have to do is allow it to set for a bit so that it will dry out a little. But otherwise, this really tastes so good. I maybe ate a couple of pieces or maybe a three. But who’s counting?
Ingredients
1 lb cod fish fillet
1⁄4 cup Land O Lakes butter or 1⁄4 cup Land O Lakes margarine, melted
2 tablespoons lemon juice
1⁄4 cup Gold Medal all-purpose flour
1⁄2 teaspoon Morton salt
1⁄8 teaspoon McCormick white pepper
McCormick paprika
Instructions
If fish fillets are large, cut into serving pieces.
Mix butter and lemon juice.
In another bowl, mix flour, salt and white pepper.
Dip fish into butter mixture; coat fish with flour mixture.
Place fish in ungreased square baking dish, 8x8x2 inches.
Pour remaining butter mixture over fish; sprinkle with paprika.
Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired.

I was so excited to see this and this is the way I do my fish and I was all set to do so as I always have fish filets in my freezer, and lo and behold all I have is a pound of hamburg, so it’s a no go this time but for sure the next time I have some but I do not use cod, I use flounder, not to mention cod is becoming more expensive now that has been overfished but luckily it was caught before it got out of hand.
I have always baked flounder without the flour just butter lemon paprika salt pepper and thyme. My husband loves it
