Grandpa’s Country-Style Beef Stroganoff

My Grandpa was born and raised in a time where there were no such things as leftovers. If food didn’t get eaten during a specific meal, it just got pushed back to the next meal. There was never anything that went to waste. They simply couldn’t afford to do it back then. Still to this day, if I go visit him with a bag of takeout food, before I leave, he wants to know what I’m going to do with the leftovers.

If I know it’s something I’m not going to eat, I just leave it in the fridge for him. I know he will eat it at some point, and be happy about it. When I was visiting when I was younger, we had sirloin steaks for dinner one night. There were a few leftover and I didn’t think too much of it.

Until lunch the next day, when Grandpa made the most delicious stroganoff I had ever tasted. “What kind of meat is that Grampy?” “Well, that’s the steak you had last night honey!” Who would have known. It’s just like this recipe I found on The Pioneer Woman.

You can use fresh steak if you don’t have leftovers, but Grandpa would make sure you use what’s leftover first!
