This yummy salad is perfect for the church potluck. What’s a church potluck dinner without some sort of fruity fluff salad? You know who else loves this dessert salad? Babies! If you’ve got a little one who is just starting on solid foods give him or her a tiny little taste of this fluffy dessert and watch their face light up in delight. I wouldn’t feed them any marshmallows though because well, you just don’t want to load a wee one up on sugar.
Check out what my pals over at Butter With A Side Of Bread had to say about this recipe and cream of coconut:
This recipe has been a family favorite for years. I love fruit, and while fresh fruit is my favorite, this is a great recipe to make in the winter when good produce is hard to find (and expensive!), and it has also come in handy many times when I need to make a side dish and don’t have time to run to the store since many of the ingredients are ones that I keep on hand regularly.
The fruit in this creamy, dreamy, fluffy salad is amazing. It tastes so fresh and citrusy! I love it and so do my crazy kids who don’t really like this sort of thing.
Ingredients
3 oz. pkg instant Jello vanilla pudding mix
¾ cup-1½ cups TruMoo milk*
⅓ cup Tropicana frozen orange juice concentrate
8 oz container Cool Whip
20 oz. can Dole pineapple chunks or tidbits, drained well
11 oz. can mandarin oranges, drained well
2 Chiquita bananas, sliced
Instructions
Combine pudding mix, milk and orange juice concentrate in a mixing bowl.
Beat with an electric mixer on medium speed for about 2 minutes and then fold in the Cool Whip. Gently mix in the fruit and chill in the fridge for 2-3 hours until ready to serve.
Feel free to add more fruit. I often add more oranges or bananas, and sometimes I add strawberries and mini marshmallows too. Enjoy!
*We’ve made this recipe dozens of times with successful results, yet we’ve gotten several comments that the salad is too soupy. So, our advice is to reduce the milk to ¾ cups initially, and if the consistency is to your liking, feel free to add more.

Quick Tip: I like to use multi-colored mini marshmallows in this salad. It just looks pretty!
Thank you to Recipe Lion for this great recipe.
Yummy!!!
Have you ever tried making this with marshmallow fluff/creme mixed in? If you always have success and people trying the recipe sometimes find it soupy, they may not be draining their fruit sufficiently. I think when I make this I’ll use crushed pineapple and press the juice out through a seive. It sounds so delicious and I love all things orange.
500ml cottage cheese, 1 small peach jello powder, 1 can drained mandarin oranges Mix. Then fold in 1 large tug of Cool Whip. Insanely good too. Easy Peasy.
how can you measure cottage cheese in mL? it’s not a liquid.
There are 30 ml to an ounce, so, 500 mi is equals to 16 ounces or 2 cups.
