Gooey, Flaked, Cheesy, Crunchy Potatoes

My sister and her husband just bought their first house not that long ago. They wanted to celebrate their special accomplishment, and so did we! It’s always so exciting to take these big steps in life, and it’s even greater when you can have you loved ones around you. I suggested that she probably should have some food to serve her guests. She said that she had already planned on a main entree, but with moving and getting things set up, she didn’t really have much time for anything else. I told her that I would take care of the side dish, and we asked a few other people to bring a dish too.

I wanted to find something that was tasty, filling, and simple to make, I came upon these potatoes on The Girl Who Ate Everything, and figured it was going to do the trick. I made two pans of these because I wasn’t sure how many people were going to show up. They had a great turnout and it was a lot of fun.

There were hardly any of these potatoes left and everyone complimented me on the flavor. Now, I make them at home all the time. They are so simple.
