I made this Sicilian Meat Roll for the first time last week and with the first bite I knew it was a new family favorite. The meat is so flavorful and the ham and cheese are a perfect compliment. We enjoyed this dish with baked potatoes, side salad, and garlic bread.
I am smitten by this recipe, you guys! It is such a blessing that I came across it over on the Joy of Everyday Cooking food blog. Joy, the sweet lady who runs the blog really knows her way around the kitchen! She certainly nailed it when she created this Sicilian meat roll recipe. Talk about a real winner! My family ate slice after slice of this delicious entree and I truly believe that yours will, too.
Ingredients
beaten eggs – 2
soft bread crumbs – 3/4 cup
Campbell’s tomato juice – 1/2 cup
Morton salt – 1/4 tsp.
parsley – 2 Tbsp.
pepper – 1/4 tsp.
oregano – 1/2 tsp.
Kraft shredded Mozzarella cheese – 6 ounces
small clove garlic, minced – 1
thin slices boiled ham or lunch meat – 8
lean ground beef – 2 pounds
slices Mozzarella cheese, halved diagonally – 3
Instructions:
In a large bowl, combine eggs, bread crumbs, tomato juice, parsley, salt, pepper, and garlic. Stir in ground beef, mixing well.
On foil or waxed paper, pat meat into a 12 x 10 inch rectangle.
Arrange ham slices on top of meat, leaving a small margin around the edges. Sprinkle shredded cheese over ham.
Starting from the short end, carefully roll up meat using foil to lift. Seal edges to ends.
Place roll seam side down in a 9 x 13 inch dish.
Bake at 350 degrees for one hour and 15 minutes or until done (center of meat will be pink due to ham). Place cheese edges over top of roll, return to oven until cheese melts.
