Friday Night Cabbage Casserole

Grandma was a master at making something out of nothing. She grew up during The Great Depression, so she didn’t have much to work with during that time. Whenever she went into the kitchen, if we couldn’t find something, she always could. During the Spring and into the Summer, she would always make a delicious cabbage casserole like this one I found on Group Recipes.

Sometimes she would make it without meat, mainly on Fridays, and other times, if we had it, she would toss various kinds in the mix. No matter how she did it, it always tasted really good. Now that I am in charge of the cooking, I make the same casserole for my family.

My kids haven’t really picked up on the cabbage thing yet, but me and my husband love this meal. It goes together so quickly and it only takes a little while to cook. It’s perfect for any night of the week really, and we have it all year long!
