Fresh From The Ocean To Your Plate: Italian Tuna Patties

When I do make these for dinner guests, I always pair them up with a nice salad of fresh greens and a vinegar dressing. The flavors just marry together and compliment one another so nicely. I try to make an Italian bread of some kind to go along with these as well just for a filler. I don’t want anyone walking away from my house without a full belly!

Even my super picky toddlers will eat these tuna patties…now that says something!

 

Ingredients

2 (5 oz.) can(s) Starkist light tuna in water, drained well
1 medium zucchini, shredded
1 egg, lightly beaten
1/2 c Progresso Italian bread crumbs
2 Tbsp Kraft shredded mozzarella cheese
2 Tbsp grated parmesan cheese
2 Tbsp Hellmann’s mayonnaise
1/2 tsp oregano
1/2 tsp basil
1/4 tsp onion powder
1/2 tsp garlic powder
to taste salt & pepper
2-3 Tbsp olive oil

Instructions

Shred the zucchini. Place it in a colander. Press lightly with a spoon to remove the liquid.
Place all ingredients except oil into a mixing bowl. Stir to blend very well.
Form the mixture into patties. Set aside.
Heat olive oil in a large skillet over medium.
Cook patties until golden brown (about 2-3 minutes per side)
Drain on paper towel lined plate.
Be sure not to crown the skillet. Cook in batches if needed.
Serve immediately
