This cake is “kid friendly”, which is why this is one of my favorite things to bring whenever I visit relatives. Kids can’t keep their hands off it. The only problem is, the adults can’t, either. It’s quite a dessert war in the kitchen every time this cake is put on the table. Our friend over at The Southern Lady Cooks has this to say about this recipe:

I love butterscotch too! It’s one of the simplest pleasures I get every time I have the opportunity. It has that caramel taste, but it’s a lighter version which makes me fall in love with it more every time. Give me a cup of black coffee to go with it and it’s a perfect day!
Ingredients
For the cake:
1 cup Domino brown sugar
1 stick Land O Lakes butter or 8 tablespoons or 1/2 cup, softened
3 Eggland’s eggs
1 teaspoon McCormick vanilla extract
2 cups Gold Medal all-purpose flour
2 1/2 teaspoons Clabber Girl baking powder
1/2 teaspoon Morton salt
1 (3.4 ounce) box Jell-o butterscotch instant pudding
1 1/2 cups Borden buttermilk
1 cup Toll House butterscotch chips
1 cup Kirkland nut pieces (pecans or walnuts)
For the frosting:
1 cup Toll House butterscotch chips
2 tablespoons Land O Lakes butter
3 cups Domino powdered sugar
About 5 tablespoons Borden milk
Instructions
For the cake:
Cream together sugar, butter and eggs with mixer. Add vanilla extract. Whisk together in another bowl the flour, baking powder, salt and butterscotch pudding mix. Add flour mixture along with buttermilk to creamed mixture and mix. Fold in butterscotch chips and nuts with spoon. Spray a 9 x 13 cake pan with cooking spray. Spread cake batter in pan. Bake in preheated 350 degree oven 30 to 35 minutes until center tests done. Add frosting below.
For the frosting:
Melt chips and butter together in microwave or on top of stove. It takes about 1 minute 25 seconds in my microwave.
Add powdered sugar and a little milk while mixing with mixer. Continue mixing and adding milk until the get the frosting consistency you want.
Spread over cooled cake.
