Fiery Fiesta Burrito Pie

We were going to be having a taco bar lunch at work one day, and they asked everyone to bring in a little something extra to do along with the meal. It was going to be all Mexican-inspired dishes, and I didn’t know how to cook anything Mexican except for tacos…and those were clearly taken already. So, I did what everyone does and turned to the internet for a dish that was going to fit with the theme and one that wasn’t going to be impossible to put together.

I found this recipe on All Recipes for a burrito pie. First off the bat, I thought it looked delicious. Second, it seemed fairly simple to make.

I printed it out, shopped for my ingredients, and made it for the luncheon. It was a huge hit! Everyone loved it so much, there was not a scrap left in the pie plate. Next time I make this, I won’t be too far-fetched to double the recipe!
