Everything But The Kitchen Sink Egg Scramble

Every day for what seemed like a year, my youngest daughter, when asked what she wanted for breakfast would say an egg. So every morning I was standing at the stove frying up an egg for her. That’s it, just one egg, fried…that’s all she wanted. Well, the following school year, she must have got tired of that fried egg, because she said she wanted eggs, but maybe a different kind.

So I started looking online to see what kinds of eggs I could make. I mean, who knew you could do so much with eggs? I found a recipe for a vegetable egg scramble on The Pioneer Woman and I knew it would be right up her alley.

She loved vegetables. I made it for her, and my other two girls, the following morning for breakfast. It took a little bit longer than a fried egg but it was so worth it. I even had some myself. This is our new favorite breakfast!
