Easy Breakfast Casserole – This One Is A Lifesaver!

I’ve made this particular casserole many times already. Sometimes I add more veggies or pretty much any leftovers I happen to have from last night’s dinner. And the recipe is so simple!

Somehow I’ve noticed it’s much easier to get the kids out of bed when the house already smells delicious! A bowl of cereal just doesn’t have the same effect, you know? And I guarantee it’s going to make your day better, too, to start it off with a wonderful breakfast instead of just a cup of coffee and some toast.

No need to worry if you don’t have a 9×13 dish. I grab whatever casserole dish happens to be clean when I start making this! You gotta do what you gotta do, right?

 

Ingredients

4 medium sausage patties or your favorite healthy substitute

2 large Eggland’s eggs

2 c cooked grits

1/2 small onion, chopped

1/2 small tomato, chopped

2 c mexican blend shredded cheese

2 dash(es) salt (to taste)

2 dash(es) pepper (to taste)

2 dash(es) McCormick garlic powder

1 Tbsp Land O’ Lakes butter or substitute

 

Instructions:

Preheat oven to 350 degrees.

In a separate pot, cook grits approx 20 minutes, adding butter and salt to taste.

Cook sausage patties in pan on medium high heat. After cooking sausage patties, chop up in bite size pieces.

Add chopped onion, saute until soft.

In a bowl, break eggs and stir well with fork.

Layer sausage, onions, chopped tomato, shredded cheese, stir in grits and add eggs, stir. (in that order)

Put in oven at 350 for 30 minutes, take out and let set for 5 minutes.

Quick tip: Try using ground turkey instead or sausage, for a leaner option.

WHy do you layer things, and the stir in the grits? Also, have you tried frying the sausage by crumbling the patties and frying it broken up? Cooks faster.
