Dust Off Your Sombrero For These Yummy Chicken Enchiladas!

It was time again for yet another sports banquet for my athletic son. Every time we go there are always four different kinds of potato salad, three different macaroni salads, five crock pots of cheesy potatoes, and several other repeat dishes. The moms always complain that they are tired of seeing the same foods again and again, but nobody ever seems to want to stray from their go-to potluck dish.

This time, I was going to make something different. I scoured for a recipe that was affordable, easy to make, and could serve up a decent crowd. That’s when I stumbled across this recipe on All Recipes.

The picture alone had my mouth watering, and I hadn’t even tried them yet. On my next shopping trip I grabbed all the ingredients and made them for my family at home. They were a big thumbs up from everyone at the table.

When the sports dinner came around, I doubled the recipe and cut the enchiladas in half. They were gone in no time and it really spiced up the event…if you catch my drift.

Quick Tip: Make sure to allow the dish to cool for ten minutes minimum or all the cheese will slide right off!
