Double Delish Twice-Baked Potato Casserole

 

The recipe only calls for green onions, but sometimes I toss in green pepper and red onion instead to give it a little boost of flavor. Mushrooms would be good too but I haven’t tried that yet. Not only does this casserole make a perfect side dish for steak, you can even eat it as an entree. Add in more bacon or substitute ham and it will really fill you up. Everyone in my family always looks forward to the nights when I make this!

 

Ingredients

6 baked medium potatoes

1/2 tsp of salt

1/4 tsp of pepper

1 lb cooked and drained Hormel bacon

3 c. of Daisy sour cream

2 c. of Kraft shredded mozzarella cheese

2 c. of Kraft shredded cheddar cheese

2 chopped green onions

 

Instructions

Now you want to begin by chopping the potatoes into 1 in. cubes.

Then you can put about half into a greased baking dish.

Now add in the salt, pepper, and the bacon.

The next thing you need to do is smother this with 1/2 of the sour cream and cheeses.

This will need to bake for 25 min at 350 degrees.

Onions can be put on top!

Serve!
