Potatoes go with everything, and everyone loves potatoes. I like potatoes too, but I get bored making the same ones over and over again. I’ve made twice baked potatoes before and it always seemed like a lot of extra work. When I saw how easy the instructions were for this potato casserole on Group Recipes, I was pumped right up! I knew that we had to try this with our next meal.
The ingredients list was short so it was quick and cheap to get everything we needed when I made the weekly visit to the grocery store. These were by far the easiest double baked potatoes I have ever made. And just because they were easy, there was no sacrifice of flavor what so ever.
The greatest thing in my opinon was even my one-year old could eat them. Have you ever tried giving a toddler a baked-potato? It doesn’t work.
This casserole has all the mashing and cutting up done for you already so all you have to do it scoop it out and they are ready to eat. It was a favorite that night and has become a staple side in our dining room. So glad that I came across this delicious dish!
