When it comes to cooking and especially making quick and healthy dinners for a crowd, I really look up to my mother. There were four of us kids, she was working from home (on top of taking care of us) and still she managed to cook a delicious meal for us every single day of the week.
We literally never got takeout – well ok, maybe a few times, but my Mom firmly believed in healthy, homecooked meals so takeout was always the very last option.
She has collected a vast amount of very simple, fast-to-make recipes that can easily be doubled for a larger crowd, if necessary. This is probably one of the yummiest, most old-fashioned dinner mom used to make, and the best part is you can cook it all in one skillet!
That’s a big thumbs up from me; I really don’t like doing the dishes after dinner so whenever I can avoid a huge mess in the kitchen, it’s a bonus!
