Creamed Peas Over Toast – A Satisfyingly Simple Lunch

One of my favorite childhood meals was creamed peas on toast.  I can’t say that we ate it often, but when we did I was in heaven.  My siblings, however, hated peas.  The meal was their worst nightmare, and they may have sat at the table for hours, refusing to eat it.  That’s probably why we didn’t eat it often.  One of my sisters and one of my brothers (I have two of each) to this day won’t eat peas.  I’d eat peas in any way, shape or form!

I love making recipes from my childhood. it brings back so many fond memories. What is a dish you used to eat as a child?

 

Ingredients

3 tablespoons Kerrygold  butter
3 tablespoons Gold Medal flour
2 cups milk (or substitute some heavy cream for some of the milk)
1 can peas; drained
salt and pepper to taste
several pieces of toasted white bread

Instructions

In a nonstick skillet melt the butter. Add the flour and stir for 2-3 minutes until flour is the texture of sand.
Stir in milk until smooth and bubbling. Gravy will thicken.

Stir in drained can of peas and cook for 2-3 minutes until heated through. Taste test and add salt and pepper as desired.

Make 2-3 pieces of toasted white bread. Place on plate and cover with creamed peas.

My Mom, Who is now parilized on her left side and lives in a nursing how since 2010, and myself loved to make creamed peas on toasted shrimp sandwiches. Havn’t had that in years and can’t have it now as I live with my oldest son who is very allergic to shell fish. Memories

Same here! And a small jar of diced pimientos (drained). We loved it as kids, and our grandkids STILL love it!! Such a quick and tasty meal. Creamed Tuna on Toast!

I have made it for years except I have always added Salmon. I got this recipe from my husband’s Mother. It sure has an unusual name. She called it Salmon Pea Wiggle. Lol
