I have to say, this recipe really turns your ordinary chicken into something completely fresh and tempting! It is a wonderful combination of slightly sweet and savory flavors, with the exotic addition of curry.
The dish looks good, too, so it would make a nice presentation for a special occasion. I know what some of you may think; ”Raisins?? Not a chance!” That was my first thought, too! But I decided to add them, anyway – and the dish turned out super awesome. They did not taste weird at all, and I’m definitely going to add them every single time I make Country Captain Chicken!
Ingredients
1/3 cup Gold Medal all-purpose flour
1 tsp salt
1/4 tsp pepper
3-4 lbs chicken
4 Tbsp Land O’ Lakes butter
1/2 cup chopped onions
1/2 cup chopped green pepper
2 cloves garlic, minced
2 tsp McCormick curry powder
1 tsp salt
1/2 tsp dried leaf thyme
2 (14.5-oz.) cans stewed tomatoes
3 Tbsp Sun Maid raisins
Instructions:
Mix together flour, salt, and pepper in a ziplock bag. Add chicken pieces and toss to coat.
Melt butter in a large skillet, add chicken and cook until browned on all sides.
Remove chicken and set aside. Add onion, green pepper, garlic, curry, 1/2 tsp salt, and thyme, and cook until tender.
Add tomatoes, breaking up. Simmer, uncovered, 10 minutes.
Return chicken to skillet and simmer, covered, over medium-low heat, until chicken is fork tender and juices run clear, about 45 minutes.
Add raisins and cook 5 minutes longer.
Serve with hot cooked rice.
