Chicken Almond Rice Casserole And A Special Guest!

Whenever I am at one of my aunts’ house, they usually serve a classic family meal that everyone will enjoy. If during reunions we always serve the best food we have to offer, it’s different when we visit families. When we visit families, it’s usually about family recipes and family specialities. During my last visit at Aunt Beth’s house, she served this chicken rice casserole that has almonds in it.

Since I love any type of nut, I absolutely love that casserole. I remembered eating it as a kid whenever we visited her. Aunt Beth still hasn’t lost her touch. The dish still tasted the same.

During the middle of the meal, a visitor arrived just in time to enjoy the casserole that Aunt Beth prepared. It was my cousin, her daughter. She wasn’t supposed to be home because she has work during the weekends for that month.

Aunt Beth was surprised, but it was good surprise! She made a fuss over her daughter and served her everything she could put on her plate. It turned out this dish was also my cousin’s favorite.

This recipe that I am bout to share with you reminds me of Aunt Beth’s rice dish. It has a few different ingredients, but they both taste really good. I hope you fall in love with this version!
