Cold winter days always put me in the mood for home cooked dishes. One of the favorites around our house are mashed potatoes.
There are so many things that you can do with mashed potatoes too, I always try to mix them up a bit and make them fun and interesting. When I found these cheddar baked mashed potatoes on Recipe Lion, I knew that it was going to be the next way that I made this delicious comfort food.
My wife is probably the biggest critic when it comes to mashed potatoes, because she swears that her mom makes the best and nobody can make them anywhere close to hers.
When I tried these out, she really was impressed. She will never admit that I came close to matching her mom’s yummy potatoes, but the fact that she had three helpings says enough to me.
We make these for a side dish all the time now. My kids love them too so it’s nice to have something we can all agree on for once.
