Cheddar? Check. Spuds? Check. One Amazing Casserole? Check!

Is there really anything that goes better together than cheese and potatoes? Ok, maybe peas and carrots and Bert and Ernie. LOL! Today, we will be focusing on this amazing cheddar and potato casserole that my mom often made for us when I was growing up. This is basically an au gratin scalloped potato type recipe and it is stinkin’ good! Oh, and did I mention that it is super easy to make? Well, it totally is!

Some people opt to peel their potatoes for this recipe but I like to leave the skins on. I think that it gives the dish some extra texture as well as a whole slew of vitamins and minerals. We can’t forget about our vitamins and minerals now, can we?
