I think I told you about my collection of easy go-to recipes before. I rely on these recipes a lot because they are perfect for emergency visitors and whenever I don’t have the time to slave away in the kitchen. These tasty chicken avocado burritos now belong on that list. My kids and I ate these lovely burritos for lunch last week. We are a homeschooling family so I get to make my kids all sorts of yummy things for lunch. These burritos were certainly better than any food that would be served in a school cafeteria.
Done in fifteen minutes! I can finally eat! Gosh, these easy recipes are a real blessing to me. It’s just an added bonus if they’re also healthy. This recipe falls under those two categories. You will surely enjoy the creaminess of the avocados along with the flavor and the slight crispness of the chicken. This is one amazing dish everyone will love!
Ingredients
2 cups cooked and shredded chicken (see quick tip)
1 cup Sargento Mozzarella grated cheese
1 avocado -diced
2 Tablespoons cilantro-chopped
4 large Tortilla Land tortillas
4 Tablespoon Daisy sour cream
1 Tablespoon Wesson oil
Instructions
Heat 1 tablespoon olive oil in a frying pan, place chicken breast sprinkled with salt and pepper and roast for about 5 minutes on each side. Spread 1 tablespoon mustard over the chicken, add about 1/4 cup water add cook covered for a few more minutes.
Cut cooked chicken into thin stings.
Mix the chicken, cheese, cilantro, and the diced avocados.
Spread 1 tablespoon sour cream on each tortilla, add 1/4 of the mixture, form a roll.
Heat 1 tablespoon oil in a pan and place all four tortillas on the pan, cook for 2 minutes on medium- high heat. Flip on the other side and cook for another minutes or until the tortillas are golden.

Quick Tip: For the shredded chicken: 2 chicken breasts, salt, and pepper- to taste, 1 Tablespoon mustard, 1 Tablespoon olive oil

I add onion to everything (except ice-cream) so you know I added some sweet onion to the chicken when I cooked it and added a little diced tomato and some cholula hot sauce.
