Chase Those Storm Clouds Away With Summery Sunshine Salad!

How many times have you been to a party or picnic and some elderly lady brings a jello salad with all sorts of little fruit pieces and whatnot in it?

If we are counting just church potlucks alone I’d have to say somewhere around 45,000 times. And guess what? I never ate them. I just assumed they’d all taste like crap and I’d be disappointed. I mean, Jello has never really been my cup of tea. However, the other day, my southern pal Sally came over with a slice of Southern Sunshine jello mold and insisted that I try some. So, I reluctantly did. Wow! It was insanely good. So, this is what I’ve been missing all my life?

Every southern cook has a congealed salad recipe in his or her recipe box, and this should be yours. Southern Sunshine Salad is a jello fruit salad filled with pineapple, carrots and southern pecans. This lemon jello recipe is a vibrantly colored salad perfect for a church supper or picnic.
