This Cabbage Casserole Is Beefy!

The spring break of the school year always meant one thing…off to Aunt Mae’s house in Florida we would go for a week full of fun in the sun! It was my favorite time of the year. I think I enjoyed it even more than summer vacation. Every time we went we would spend time at the pool, go to the amusement park, and hang out outside, and just enjoy each other’s company.

Most of the time, we would go out to eat or order pizza. Aunt Mae lived pretty good so she didn’t mind taking care of the bill while we were there. One year, she wasn’t able to work because she had to have knee surgery.

She had been off for six weeks and wasn’t making any money. She still wanted us to have the best time though and decided she was going to cook all the meals at home. One such meal was cabbage and beef casserole.

I was skeptical of it at first, but after I tried it, it was one of my favorite parts of the whole trip. It was just like this recipe I found on Group Recipes. Now, when I go down there with my kids, I ask her to make it instead of going out to eat!
