Broccoli Cheddar Soup Done On Your Lunch Break

When I’m having a long, difficult day at work, the last thing I want to do is go into a restaurant and deal with people. Even less than that do I want to eat my lunch in my car after picking it up at a fast food window. I want something comforting, warm, and homemade served to me from home. I am definitely lucky because my job is located just a few minutes from my house.

That’s why, when I came across this recipe for broccoli cheddar soup on Spend with Pennies, I was convinced that it was written just for me. The next time I went shopping, I picked up all the ingredients that I didn’t already have at home. When I got my next lunch break, I went home and made this dish.

It was so simple, and they were right, it was done in just 20 minutes. Then the true test came… how it tasted. It was delicious! It reminded me of my grandma’s homemade broccoli soup.

I inhaled the entire bowl, tossed the leftovers back in the fridge, and went back to work with a smile on my face.
