Break Me Off A Piece Of That Baked Brunch Omelet!

Back when I lived at home with Mom and Dad, morning breakfast was always the most important meal of the day. We were lucky enough back then to have a stay-at-home mom, and a dad that didn’t have to go into work until we left for school That allowed for us to all sit around the breakfast table and start our day off together. Today, with as hectic as my life is, those are times I can only dream of giving my kids.

That was, until I found this recipe on All Recipes. The first thing that drew me in was the fact that I could make it the night before and pop it in the oven in the morning.

That way, I didn’t have to miss out on any of my precious beauty sleep hours. My husband usually leaves before the kids get up for school, so this was ready for him, and I kept it warm for the little ones.

Everyone truly enjoyed it. I ate the leftovers for lunch too. They heated up quite nicely.
