I have always been an avid Mexican food fan. As a kid, my mother would make tacos and burritos for us to eat at least once a week. She made us enchiladas, too but that always seemed to be a lot of work. I am super stoked to have come across this great recipe for enchilada casserole. it seems like it is tons easier to make than regular enchiladas. Everything just gets tossed into a baking dish. Simple!
