Aunt Tina’s Éclair Pie Is So Sinfully Delicious…It Makes Edna Cry

Aunt Tina usually serves dessert whenever she is present in our reunions. She lives the farthest from us, which is why it is rare for her to be present. We always crave for Aunt Tina’s desserts because desserts are her expertise. So every time she comes, we always request for something that we haven’t tasted yet. After Aunt Tina made the dessert, we would ask for the recipe so we could also make them at home for our families. Aunt Tina is never stingy with her recipes.

She always gives us a copy whenever we ask for it. Last reunion, Aunt Tina was there. So we told her to surprise us with something chocolatey and creamy at the same time.

Oh I was looking forward to one of her chocolate cream cakes. My twin boys would eat anything creamy and chocolatey and I’m sure they would love Aunt Tina’s desserts. We were surprised when she served us with an éclair pie.

I love eclairs, but I rarely taste éclair pies. It was so good though that one bite was enough to make my cousin Edna get teary-eyed. She’s the one who always gets emotional about the good things.

Quick Tip: For a faster, easier version you can use a 12oz Cool Whip instead of the homemade whipped cream and you can also melt a regular chocolate frosting (you know, the Pillsbury kind… just pop it in the microwave for 20-30 seconds) and pour it on top.

I love your recipes, but I wish they were printable, so I don’t have to sit and write then down. I’m older and my hands shake
so the written recipe is difficult to write and hard to read after I’ve written it. No problem in making the recipes, plus they turnout deliciously………just difficult to hand- copy off the computer.

Nancy, I have the same issue. If you copy and paste the recipe on a document, you can then print it. If you don’t know how, find a teenager to help you…..that’s what I did! Good luck.
