Aunt Mary’s Chicken Pot Pie Casserole

My Aunt Mary was a whiz in the kitchen. There was nothing that came out of there that didn’t hit the spot. She made the best comfort foods and everything was home style and traditional. When I was in college, whenever my cousin Sam used to say she was going home for the weekend, I would do whatever I could to get on that train with her. I knew while I was there, if nothing else, we would eat well.

On one such occasion, Aunt Mary made this amazing casserole that she called a pot pie. I was confused because the only pot pies that I had ever had come out of a freezer box. I wasn’t going to question her though…I knew better.

This was the most amazing pot pie I had ever had. When doing a search for pot pies on the internet, I found one that looks similar on All Recipes. I can’t wait to give it a try!
