Aunt Betty’s Divine Creamy Noodle Bake

Aunt Betty was perhaps one of my most favorite people on the planet. She was actually my mom’s aunt, so she was more like a Grandma than an Aunt. The light that would shine in her eyes when we showed up for a visit was enough to make me want to go over there all the time. She never had any kids of her own, and she was never married, so it didn’t take long for her to get lonely.

Thankfully, she moved to the same town as we were living in when I was a teenager. By that time, I could ride my bike to her house whenever I wanted. I would go over there and eat dinner with her all the time.

Mostly, I would take whatever my mom had made to her and sit there while she ate. Once in a while though, she would make the most delicious noodle bake, like this one I found on The Pioneer Woman.

She would always call ahead of time and let me know she was making it because she didn’t want to have extra food in the house. No waste!

I always hung around a little longer when we were eating this together…probably because I went back for seconds. I sure do miss Aunt Betty, but I remember her every time I make this casserole.
