You Aren’t Going To Find A Better Breakfast Casserole Than This Amish-Inspired Version

During the holidays like Christmas and Easter, we usually do a bigger type of gathering so that we can really draw in the crowd. This is generally when the most people come anyways, after all, those are the Lord’s holidays. When I know we are going to have a big turnout, I usually make a few pans of this yummy dish. I can switch up the meats and cheeses so each one is a little different. I can’t remember ever taking any leftovers home with me, making cleanup super easy too! Check out what they are saying about this recipe over at My Recipes:

 That’s all you need to know about this versatile and delicious classic breakfast casserole…simple and yummy!

 

Ingredients

1 pound Hormel sliced bacon, diced

1 medium sweet onion, chopped

6 eggs, lightly beaten

4 cups Ore-Ida frozen shredded hash brown potatoes, thawed

2 cups (8 ounces) Kraft shredded cheddar cheese

1 1/2 cups (12 ounces) 4% cottage cheese

1 1/4 cups shredded Swiss cheese

 

 

Instructions

In a large skillet, cook bacon and onion until bacon is crisp; drain. In a large bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13-in. x 9-in. baking dish.

Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
