Appalachian Slow Cooker Beef Roast With All The Fixins’

What types of seasonings do you use when making a pot roast? I have used beer before! Can you believe that? A long time ago and a lady I had met while my husband was deployed to Iraq told me about her slow cooker beef roast recipe that called for one can of beer. I thought she was crazy but after giving the beef a taste I quickly realized that this woman wa son to something. The meat turned out super tender and flavorful. Yummo!

My mother is the one who taught me to use Lipton onion soup mix in my pot roast and boy oh boy, was she ever on to something! Just this simple addition of seasonings really brings out the flavor in the roast and it makes the meat insanely tender.

 

Ingredients

2-3 lb beef roast of your choice

Bertolli olive oil

1 lb carrots, baby or regular

4 red, or I like Yukon gold potatoes

1 small yellow onion, quartered

5 cloves garlic, crushed

1 package Lipton Onion Soup Mix

2 tsp beef base

3 cups hot water

 

Instructions

Brown roast in a pan with a little bit of oil over medium-high heat, until all sides “sealed” and brown

Layer half of the carrots, garlic and all of the onion on the bottom of crock pot

Top with browned roast

Arrange the rest of the carrots, garlic and potatoes on top of roast

Mix beef base and soup mix in the hot water, pour over roast and veggies

Cover crock pot tightly, set on high

Cook for six to eight hours, meat will be very tender, falling apart and veggies cooked through

*Depending on your how quickly your crock pot cooks things, you may want to adjust cooking time and/or heat. This is how long my sloow cooker takes : )
