Who Else Wants To Skip The Sandwich And Have This Amazing Casserole Instead?
My husband came home from work one day a few months ago, on a Friday mind you, and let me know that his boss and her husband would be joining us for brunch the next day to talk about an important action that was about to take part within the business…him becoming a partner! He said he didn’t want to do it at work because he wanted me to be included in his excitement. How, very sweet!
The problem was, I didn’t have any idea what to serve for brunch. I suggested maybe ordering something out from the restaurant in our neighborhood, but he said he would rather give them a homemade meal…of course!
So, I started forging through the fridge to see what we had on hand. We had just had corned beef sandwiches so there was some meat left over. We also had some sauerkraut and Swiss cheese.
As I looked at all the ingredients, I realized that I had recently made a casserole that called for all of them. I searched through my recipes and that’s what we had the following day. It was delicious!
