It was another one of those weeknights when I had my main dish planned out, a nice pork tenderloin going in the crock pot. About halfway through the day is when I start thinking about what I am going to pair the meat up with to make a meal. Of course, we will have a nice salad to go with it for a vegetable, but that isn’t going to fill up my hungry family. We have to have a potato with just about every meal in order to be completely satisfied.
Searching through Group Recipes I came across Wedding Potatoes. Strange name I thought…but let’s give it a try. The directions were straight forward and the ingredients list was short and affordable.
Putting them on the table was the true test though. My family gobbled these right up. Everyone really did enjoy them and most came back for seconds.
My little one put ketchup on hers…not sure I would recommend that but she loved them. Since then I have made these several times and they have even become a requested dish for our potluck events. Anytime I can switch up the traditional potato it’s a good time for me!
