My son loves tacos. I think he would eat them every day if he could. “What do you want for dinner?”…”Tacos!” So, we usually have them at least once a week. Even if I’m tired of them, I’m just happy to see my picky eater actually fill up on something other than cereal and snack foods. One Tuesday I was feeling creative so I thought I would look around and see what I could do to jazz up our evening.
I came across this recipe on Group Recipes and thought why not? I had all of the ingredients already and a little extra time to work on something new so I gave it a whirl. I put the dish out on the table and I though my boy was going to bust out into tears…
“Where’s the Tacos mom?” I gave him a little bit and told him to try it before he lost it. He gave it a nibble and a huge smile spread across his face. He loved it!
Whew…crisis averted. Now, from time to time, he will request that I make those pan tacos instead of the regular ones. I serve this casserole with both chips and taco shells.
The soft shells make it feel a bit more like a meal. Taco chips are perfect when I serve it as a party food. Winner, winner Taco Dinner!
