It’s Not A Party Unless You’re Serving This Crunchy Salad! This salad not only looks good; it tastes amazing and it’s also pretty healthy! With a variety of crunchy vegetables you’re going to get a lot of good vitamins and nutrients. Of course, there’s a touch of creamy mayo involved, just so that life wouldn’t get too serious!

This recipe is perfect for potlucks, family get-togethers, and summer barbecues!

 

Ingredients

1 bunch green onions chopped

1 red onion, chopped

1 1/2 yellow onion, chopped

2 1/2 cup shredded cabbage

9 cup fresh broccoli floweretts

8 cup cauliflower, small florets

1 cup golden raisins or dried cranberries, plumped

2 cups real bacon bit crumbles

2 cups Miracle Whip

1 cup Hellmann’s mayonnaise

1 1/3 cup Heinz apple cider vinegar

Splenda zero calorie sweetener, to taste

 

Instructions

Add the raisins (or dried cranberries) to a medium size bowl, cover with water, then cover bowl with saran wrap and microwave for a few minutes (3 to 5 min). Remove and allow raisins to sit and plump as the water cools.

Chop all the onions or process them in the food processor. Finely chop the cabbage or process in the food processor.

Chop the broccoli and cauliflower.

Drain raisins, and allow to cool completely before adding to salad. Using a large bowl add the broccoli, cauliflower, bacon, cabbage, and chopped onions and raisins. Stir to combine.

In a separate bowl combine the mayonnaise, miracle whip, Splenda and apple cider vinegar, then whisk to blend together.

Pour dressing mixture over salad mixture, and stir with a large spoon to mix together.

Refrigerate for a couple of hours before serving, to allow the flavors to come together.

When ready to serve, give the salad a stir.
