You’ve Never Had A Stuffed Pork Loin Quite Like This – It’s Holiday style!

There was once a time when I would make a pork loin roast in the slow cooker with maybe a few sprinklings of salt and pepper.

It was easy to prepare and came out tasting okay. I mean, it really didn’t win any awards in the flavor department because it was prepared so boringly. Then, I discovered the fascinating realm of stuffed pork loin roasts and everything changed. Did you know that you can stuff a pork loin with virtually anything? This recipe calls for dried apricots and figs and it couldn’t taste any better.

Cooking with dried fruits, especially apricots and figs, was a very new concept to me. I had never done it before and was uncertain as to how this pork loin roast was going to turn out. needless to say, I was a bit concerned.

You see, I have very picky eaters under my roof, my husband included. They don’t like “fancy foods” as they put it. I was really putting myself out there with this recipe. When it came time toe at I didn’t tell them that the pork loin was stuffed with dried fruit. I wanted to surprise them! Well, they were definitely surprised…but in a good way! Everyone loved the roast. Yay!
