“What On Earth Am I Going To Do With All This Leftover Turkey/Chicken?”

I have a lot to be thankful for at the beginning of this year. It is the same with my friends. It’s as if this year wants to immediately give us something new to celebrate to make up for the disappointments of last year. However, these things all happened after Thanksgiving so it was a little bit late to celebrate it with the usual occasion. However, there’s no rule that tells us that we can’t have thanksgiving on another day!

So that’s what we had during the first week of this month. My friends and I celebrated a Post Thanksgiving Thanksgiving. We met at one of our friends’ house.

We cooked roasted turkey because it’s tradition and cooked a lot of our favorite food. The table was full of main courses and desserts that each of us had a hand in making. It was truly a festive sight.

It was also a night of laughter and just a nice conversation. The predicament started the next day because there was so much leftover turkey. We made it into soup, then into a salad, but there was still a lot of leftovers.

This recipe that I am about to share with you saved us all. It was discovered by one of our friends. She made these for us that morning as our breakfast—it’s called turkey cranberry melt. We all loved this so I hope you will too!
