Do you and your family enjoy giving fudge away at Christmas time? Mine sure does! We like to wrap the little squares up in waxed paper and place them into decorative tins. It makes such a lovely gift. Also, I find that this fudge and fudges like it make excellent New Year’s Eve party treats. I plan to serve this fudge while we say goodbye to 2017 and welcome 2018.
I would love to have this fudge sitting on a pretty platter in the middle of my dessert table. Wouldn’t you? This fudge is truly decadent and a snap to make.
1 lb quality white chocolate, approximately 3 cups
1 (14 oz) can Eagle Brand sweetened condensed milk
¼ teaspoon Morton salt
1 teaspoon McCormick vanilla extract
¾ cup Ocean Spray dried cranberries
¾ cup chopped Fisher pecans
Grease a 9″ x 9″ pan with baking spray.
In a sauce over low heat melt the white chocolate with the sweetened condensed milk and salt. Cook and gently stir until the chocolate is melted and smooth.
Remove from heat, add the vanilla extract and stir to combine. Then stir in the dried cranberries and chopped pecans.
Pour into the prepared pan and smooth.
Chill 1-2 hours in the fridge, or until firm. Cut into small squares and serve.
